  • 1/2 cup rice flour
  • 1/4 cup urad dal (black gram lentils)

1. Preparing Batter:

 

Rinse the urad dal and soak it in water for 4-5 hours.

 

After soaking, grind the urad dal to a smooth and fluffy consistency using a grinder or blender. Set it aside in a bowl.

 

2. Mixing Flours

 

In another bowl, mix the ragi flour and rice flour together.

 

Add the ground urad dal batter to the ragi-rice flour mixture.

 

Add salt to taste and mix everything well.

 

Add water gradually to make a smooth, pourable batter. The batter consistency should be similar to that of regular dosa batter. Set it aside to ferment for 6-8 hours or overnight.

 

3. Cooking Ragi Dosas:

 

Heat a non-stick or cast-iron skillet or dosa tawa over medium heat.

 

Once the skillet is hot, pour a ladleful of the ragi dosa batter onto the skillet.

 

Using the back of the ladle, spread the batter in a circular motion to make a thin dosa.

 

Drizzle some oil or ghee around the edges of the dosa and a little on top.

 

Cook the dosa until it turns golden brown and crisp on the edges.

 

Flip the dosa and cook the other side for a minute or so.

 

4. Serve:
